Cabbage Rolls in Spicy Tomato Sauce
Ingredients
8 cabbage leaves
4 oz cooked rice
2 oz unsalted peanuts or cashews
4 spring onions, chopped
2 cloves garlic, crushed
1 egg, lightly beaten
2 oz mature cheddar cheese, grated
2 red chillies, chopped
1 tspn dried oregano
8 fl oz passata
4 fl oz freshly-squeezed orange juice
Preparation & Cooking Instructions
Preheat oven to 350°F.
Trim thick stalks from cabbage leaves.
Transfer them to a saucepan, add boiling water to cover and cook until wilted. Drain.
Combine rice, nuts, spring onions, garlic, egg, cheese, chillies and oregano in a bowl.
Divide between cabbage leaves, rolling each leaf up and tucking in ends.
Place in a single layer in a shallow ovenproof dish.
Combine passata and orange juice and pour over cabbage rolls.
Cover and bake for 30 minutes.
